Fillet Steak, called as ‘boneless’ meat, is a muscle which situated in back side of ridge of calf. Two for each is taken from left and right side of each animal. It is low-fat meat as all other muscle meats because the animal takes strength from back legs. It can be called ‘boneless’ meat. A good veal fillet steak is about 2 kg. It is one of the most valuable parts of an animal. It is delicious meat that does not lose its softness even if the cooking degree increases.
